StilL 630 was founded on June 30, 2011, when David Weglarz left his job to build a distillery in downtown St. Louis, Missouri, at 1000 South 4th Street. Weglarz has personally hand-crafted every drop of spirit the distillery has produced since. The name comes from St. Louis's 314 area code split across the still itself, and the operation has grown from a single founder's ambition into one of Missouri's most decorated craft producers. Weglarz has also served as president of the Missouri Craft Distillers Guild and backed the passage of Missouri House Bill 266 SA, the legislation that established Missouri bourbon as its own protected, legally defined category. The Whiskey

StilL 630 uses old-world double distillation and ages spirits in a variety of wooden barrels, drawing on organic and local ingredients wherever possible. The Missouri Straight Bourbon Whiskey is built from a mash bill of 70% corn, 20% rye, and 10% barley, aged more than five years in new charred oak, and bottled at 90 proof. Sorghum Whiskey Bottled In Bond earned ADI Best of Category Bottled in Bond Whiskey and a Double Gold Medal in 2020, and RallyPoint Maple Sunset added its own ADI Double Gold that year. Confluence American Gin swept ADI Best in Class Gin, Best of Category Classic Gin, and a Double Gold Medal in 2023, the same year Missouri Straight Bourbon Whiskey took an ADI Silver Medal. The distillery's Due Process Five Year Bourbon was named ADI Best Cask Strength Whiskey in America for 2026. Visiting the Distillery

StilL 630 hosts Grain to Glass tours at its downtown St. Louis distillery most Saturdays at 12pm, 1pm, 2pm, and 3pm. Tours are hosted by the distillers themselves, run about an hour, cover the full distillation process from grain to glass, include a tasting, are limited to 10 people, must be booked in advance, and require guests to be 21 or older. The distillery also hosts an annual StilL 630 Day Party on June 30th marking its founding.
