Beneath Perthshire's Grampian foothills, the Pitilie Burn has been carving through gold-flecked ground for centuries, and since 1898 that same spring water has fed one of Scotland's most quietly influential distilleries. Dewar's Aberfeldy Distillery makes the malt whisky that anchors Dewar's blended Scotch, and its own single malt has earned a following on its own terms.

History & Heritage

John Alexander Dewar and Tommy Dewar, sons of founder John Dewar Sr., built the distillery at Aberfeldy in 1896 and brought it into production in 1898, purpose-built to supply malt whisky for the family's blending business. In 1925, Dewar's amalgamated with The Distillers Company (DCL), bringing Aberfeldy under that larger combine. Ownership passed to Grand Metropolitan, which became Diageo in 1997. The following year, in 1998, Diageo sold John Dewar & Sons, including Aberfeldy Distillery, to Bacardi Limited for roughly $1.48 billion. Aberfeldy Distillery is owned, as of July 2026, by John Dewar & Sons, a subsidiary of Bacardi Limited, a structure that has held steady for over 25 years.

The Whiskey

Aberfeldy draws its process water from the Pitilie Burn, a natural artesian spring long associated with gold in the surrounding gravel and prized for its purity and softness. The distillery mills unpeated Optic-variety barley, sourced from Scottish farmers and malted by Simpsons of Berwick-Upon-Tweed, on a Porteus mill that has run since 1962. Mashing takes place in a 6.3-tonne stainless steel full-Lauter mash tun using three waters at rising temperatures, and fermentation runs long, 72 to 88 hours in a mix of eight Siberian larch washbacks and two stainless steel ones, a slow process credited with building the honeyed sweetness that defines the house style. Distillation happens in four onion-shaped copper pot stills, two wash and two spirit, with the spirit stills run slowly to preserve that character and yield new-make spirit at 68 to 72 percent ABV. Annual capacity sits at 3.4 to 3.5 million liters. The spirit travels 70 miles by tanker to Dewar's maturation and bottling site in Glasgow, where it matures primarily in ex-American bourbon barrels, with a portion of the core range finished in Oloroso sherry butts. Dewar's blended expressions go through a distinctive double-aging process, resting once before blending and again afterward for added smoothness, while the standalone Aberfeldy single malt range, launched in 1999, is bottled at 12, 16, and 21 years old.

Why It Matters

Aberfeldy is the largest single malt component in Dewar's blends, giving it outsized influence over the flavor of one of the world's best-known Scotch whisky brands. Dewar's has been recognized as the world's most awarded blended Scotch whisky, with the 12 Year Old collecting repeated Double Gold, Gold, and Silver medals at the San Francisco World Spirits Competition, and Master Blender Stephanie Macleod has been named Master Blender of the Year six times. That combination of blending pedigree and a genuine single malt program, matured almost entirely in bourbon wood with selective sherry cask finishing, gives Aberfeldy a rare dual identity among Scottish distilleries.

Visiting the Distillery

Dewar's World of Whisky, the distillery's visitor center, opened in 2000 and sits about 0.7 miles from the center of Aberfeldy. It offers guided tours through mashing, fermentation, distillation, and maturation, along with a heritage exhibition on the Dewar family, a warehouse visit covering the double-aging process, and tasting formats ranging from the standard Aberfeldy Experience to a hands-on Become a Blender session. Visitors can fill their own bottle from hand-selected casks, and a café and whisky lounge operate on site. The center welcomed more than 42,000 guests in 2019 and has won regional tourism awards, including the Scottish Thistle Award for Best Visitor Attraction. It is reachable by the number 23 bus from Perth or by guided day tour from Edinburgh.
