The Whiskey

Clonakilty Distillery employs a meticulous triple distillation process using three bespoke copper pot stills, crafted by Barison Industry of Trento, Italy, to produce its range of Irish whiskey, gin, and vodka. A cornerstone of their whiskey-making philosophy is the use of heritage barley, meticulously grown on the Scully family farm near the Galley Head Lighthouse. This farm-to-bottle approach ensures complete control over a vital raw ingredient, contributing a unique character to their spirits. The water essential for production is drawn from a deep artesian well also located on the family farm, further cementing the distillery's deep connection to its immediate environment. Fermentation for their whiskey is notably extended, lasting over 100 hours (significantly longer than industry norms), a deliberate choice designed to enhance and fully develop the natural flavors inherent in their mash. Following distillation, the new make spirit is carefully diluted with pure spring water from their well before being casked. A significant milestone for the distillery was the release of their first maiden distillate, the Clonakilty Single Pot Still Irish Whiskey, in May 2024.
